When it comes to good food, elegant venues, and visionary entrepreneurship, Karen Erinfolami is a name that continues to make an impression across the Midlands. What began as a passion for cooking for friends and family has evolved into two thriving businesses: Karen’s Kitchen & Catering and the Red Carpet Event Center.
Karen launched her catering business in 2007 after years of preparing meals for family gatherings, holiday celebrations, and special occasions. The positive feedback she received inspired her to take her culinary talents to the next level.
“Everyone always said my food was so good—so I tried it as a business, and it worked,” Karen shared.
Since then, Karen’s Kitchen & Catering has become a staple in the Midlands, known for flavorful dishes and professional service. She caters events of all sizes throughout Columbia and the surrounding area, bringing delicious, home-style meals to weddings, birthdays, corporate functions, and more.
But Karen’s talents extend beyond the kitchen. She is also the proud owner of the Red Carpet Event Center, located at 1231 Broad River Road in Columbia. The two-level, 10,000-square-foot venue has
served the community for the past three years and offers a stylish, well-equipped space for all kinds of celebrations.
“I wanted a name that reflected something classy and special—so I chose Red Carpet,” Karen explained. “A lot of people don’t realize it has two full levels. The upstairs holds about 130 guests, and the downstairs can seat up to 250. We even have a private space upstairs. Yes, you can rent it!”
The Red Carpet Event Center includes everything clients need for a memorable event: tables, chairs, linens, a full sound system for both levels and even outside, microphones, and podiums. And naturally, every event can be paired with catering from
Karen’s Kitchen, but is not required to.
“It’s a great value,” Karen says. “You save money because we already include so much.”
Karen is always dreaming of the next venture.
“My mind never stops. I’m always thinking about how to invest in something that will benefit my kids and grandkids,” she said.
That mindset led her to her most recent investment: transforming a former car lot into a new business. After seeing a “For Sale” sign at a lot previously owned by Jim Hudson, she made the call, purchased the property, and invested $120,000 into renovations—new floors, walls, kitchen, and bathrooms.
Now, she’s preparing to open her newest venture— Carolina Fish & Wings—a dine-in restaurant set to open this September on Spears Creek Church Road. The restaurant will feature Southern favorites including fried fish, chicken tenders, wings, macaroni and cheese, collard greens, green beans, and more.
Karen thanks the Columbia community for supporting her journey for nearly two decades.
“I’m so grateful for everyone who’s supported me over the years. I do this for my family, but I also do it for the people I serve,” she said.
